Over the years, I have shared numerous vegetarian Danish recipes on my blog. I thought it would be great to have all these recipes in one place to easily access them. The recipes are sorted by lunch and dinner, dessert, and drinks. Also, I will add to this post as I publish more recipes!
Vegetarian Danish Lunch and Dinner Recipes
Brændende Kærlighed
Brændende Kærlighed is a traditional hearty Danish dish of mashed potatoes topped with fried onion and bacon. However, for this vegetarian recipe, I use mushrooms and onions instead.
Vegan Frikadeller
Frikadeller are pan-fried meatballs, and frikadeller with potatoes and sauce are a common dinner in Denmark. For the recipe, I made vegan frikadeller using chickpeas and mushrooms. I also include how to make boiled potatoes, corn on the cob, and a vegan parsley sauce to complete the meal.
Jerusalem Artichoke Soup
This recipe is for Jerusalem artichoke soup. Jerusalem artichoke soup is a popular appetizer at restaurants in Denmark, though it would make a delicious lunch on colder days.
Kartoffelsalat
Kartoffelsalat is the Danish version of potato salad, which is creamy and refreshing. The potato salad makes a great side dish, and it is perfect for summer BBQs.
Råkost Carrot Salad
Råkost is a traditional Danish salad with carrots, apples, raisins, and lemon juice. The carrot salad is delicious and easy to make, and it is great as a side, lunch, or snack.
Vegetarian Smorrebrod
Smørrebrød is a popular lunch in Denmark using rugbrød (rye bread) that is topped with meat or fish and garnishes. In this post, I share 3 vegetarian alternatives for smørrebrød, including carrot “lox” with pickled red onion, potato and red onion, and spinach and mushroom.
Vegetarian Tarteletter
Tarteletter is another popular Danish dish that is served as an appetizer or as a dinner. Traditional tarteletter contains chicken in a bechamel sauce with asparagus. However, I use mushrooms as an alternative to chicken.
Danish Dessert Recipes
Abemad
Abemad is the Danish version of a fruit salad served with vanilla cream. My variation includes a combination of apples, pears, oranges, bananas, grapes, and pineapple, which is fresh and delicious.
Brunsviger
Brunsviger is a cake originating from Fyn in Denmark. The cake is topped with brown sugar and butter, and it is often made into a kagemand (cake man) for children’s birthdays and topped with candy. For this recipe, I make the regular brunsviger, but I do share how to make a kagemand.
Hindbaersnitter
Hindbærsnitter are one of my favorite Danish pastries, and they remind me of Pop-Tarts with two rectangular biscuits that have a raspberry marmalade filling and are topped with a glaze and sprinkles. For this recipe, I made the hinbærsnitter heart-shaped for Valentine’s Day and topped them with dried raspberries.
Klejner
This recipe is the first Danish recipe I shared on my blog. The recipe actually comes from an old Swedish Food cookbook, but the Christmas cookies are common in Denmark as well. I also topped the cookies with a chocolate glaze.
Koldskål
Koldskål is a classic summer dessert made from buttermilk. The dessert only requires 5 ingredients and is easy to make. Koldskål tastes great when topped with kammerjunker, fruit, or granola.
Pebernødder
Pebernødder are traditional Danish Christmas cookies that are similar to small sugar cookies with spices often found in gingerbread cookies.
Rhubarb Porridge
A popular summer dessert is rabarbergrød or rhubarb porridge. The porridge is easy to make, and it is delicious topped with whipped cream.
Strawberry Shortcake Æbleskiver
Æbleskiver are referred to as Danish pancakes, but they are made in a special æbleskiver pan. For this recipe, I made æbleskiver and topped them with fresh strawberries and whipped cream.
Strawberry Tart
One of my favorite summer Danish desserts is jordbærtarte or strawberry tart. The tart is made with a marzipan tart base which is topped with a chocolate layer, vanilla cream, and fresh strawberries.
Danish Drink Recipes
Æblegløgg
Gløgg, or mulled wine, is a common drink during the winter months. However, æblegløgg or apple cider is a delicious alcohol-free alternative. The æblegløgg is made from apple juice and spices.
Rhubarb Juice
For the warmer months, rabarbersaft or rhubarb juice is a refreshing and easy drink to make. The rhubarb juice is made with just 4 ingredients including rhubarb, sugar, vanilla, and water.
Delicious! (Or maybe I’m just super hungry right now, lol!) I know where to look when planning dessert this weekend!

Vegan Frikadeller sounds interesting. I have made meatballs with chickpeas, but I am betting the mushrooms would be the key component I was missing. Mine were a bit dry. I will have to give this recipe a try. BTW, anything with strawberries is on my list! Can’t wait to take a looksee. Thanks for sharing Karalee.
You’re welcome! That’s awesome you made meatballs with chickpeas before, but that’s a shame they were so dry. I would recommend adding mushrooms too, because they aren’t dry, but the frikadeller still hold their shape.

Both are delicious! The other month, I stayed at a hotel and spa on Fyn where the brunsviger originates from, and at their breakfast buffet, they served brunsviger and it was yummy! The strawberry tart is a popular summer dessert here, and it is so good with fresh strawberries!
