To followup my Valentine’s Day Gift Guide: Under £15/$20 post, I wanted to share a Danish dessert recipe for æbleskiver that is served with strawberries and whipped cream.

Outside of Denmark, æbleskiver (also spelled ebelskiver in English speaking countries) are commonly referred to as Danish pancakes. Æbleskiver are made with similar ingredients as pancakes, but they are made in a special æbleskiver pan that gives them a round shape similar to a popover. This recipe is in 3 parts: the batter, strawberries, and whipped cream. For this recipe you will need the æbleskiver pan, which you can see a picture of mine below, and you can find one at some home stores as well as on Amazon.The strawberry shortcake æbleskiver

Æbleskiver Batter

Ingredients

  • 1 cup of flour
  • 1½ teaspoons of sugar
  • ½ teaspoon of baking powder
  • ¼ teaspoon of salt
  • 2 tablespoons of butter
  • 2 eggs
  • 1 cup of milk
  • ½ teaspoon of vanilla extract
  • 1 tablespoon of butter

Directions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt
  2. In a separate bowl, melt the 2 tablespoons of butter
  3. Using the bowl with melted butter and a 3rd bowl, separate the egg yolks and egg whites. The yolks will go in the bowl with the butter while the whites will be in the 3rd bowl
  4. Add the milk and vanilla extract to the bowl with the butter and yolks and mix
  5. Combine the yolk mixture with the dry ingredients in the large bowl and mix the batter until blended
  6. Whisk the egg whites with an electric mixer until peaks form then fold into the batter until there no are more white streaks
  7. Melt the 1 tablespoon of butter
  8. Brush butter into each of the wells of the æbleskiver pan
  9. Heat the pan on medium heat and once the butter starts to bubble, fill each well with the batter
  10. Cook the æbleskiver for about 5 minutes or until the bottoms are lightly browned
  11. Flip the æbleskiver with a skewer or fork and cook the other side until lightly browned for an additional 3-5 minutes
  12. Once the æbleskiver are done cooking, transfer them to a plate or bowl and repeat steps 8-11 for the remaining batter
  13. Make the strawberries and whipped cream following the directions below
  14. To assemble, place 3-5 æbleskiver in a small bowl then top with the strawberries and whipped cream
  15. Enjoy!

Strawberries

Ingredients

  • 1 pint of strawberries
  • 3 teaspoons of sugar

Directions

  1. Rinse the strawberries then chop into small pieces
  2. Place the strawberries into a bowl and combine with the sugar

Whipped Cream

Ingredients

  • 1 cup of heavy cream
  • 1 teaspoon of vanilla extract

Directions

  1. In a bowl, combine the heavy cream with the vanilla extract
  2. Using an electric mixer, whisk the cream until peaks form

Notes

  • Depending on the size of the wells of the æbleskiver pan, the amount of æbleskiver you will be able to make can vary. With my pan, I was able to make around 25
  • While you are waiting for the butter to bubble in the pan or the æbleskiver to cook, you can make the strawberries and whipped cream instead of waiting until the end
  • In Denmark, the æbleskiver are also commonly topped with powdered sugar and served with strawberry jam
  • I bought my first æbleskiver pan from Amazon, and it was the Lodge Cast Iron pan. When I moved to Denmark, I bought a new pan at a market, and it was made in Denmark
