For this week’s post, I wanted to share an easy rhubarb juice recipe. Rabarbersaft or rhubarb juice is a popular juice to make in Denmark with homegrown rhubarb, but of course, you can use storebought rhubarb. What is even better is that the juice is easy to make without a juicer and only requires a few ingredients!
Easy 4 Ingredient Rhubarb Juice Recipe

500 grams (2 cups) of rhubarb
125 grams (1/2 cup) of sugar
1/2 teaspoon of vanilla powder or the seeds from 1 vanilla bean
1 liter (4 cups) of water
Directions
- Rinse the rhubarb stalks and chop the rhubarb into small pieces
- Add the rhubarb pieces, sugar, vanilla, and water to a medium-sized pot
- Heat the pot on medium heat
- Once the pot reaches boiling, boil the rhubarb juice for 10 minutes
- Take the pot off the heat and let the rhubarb juice cool for at least 15 minutes
- Once the rhubarb juice has cooled, use a strainer or sieve and pour the juice into a large bowl to remove the larger pieces of rhubarb from the juice. The leftover rhubarb pieces in the strainer or sieve can be used to make a jam, for topping yogurt or oatmeal, or in desserts
- After you have strained the juice, pour it into a clean bottle and place it in the fridge. I personally use a glass water bottle that has been cleaned with boiling water
- Enjoy! You can drink the rhubarb juice as is or use a 1:1 ratio of rhubarb juice and water to dilute the flavor

The rhubarb juice will last about 2 weeks in the fridge.
Can you freeze the rhubarb juice?
If you are making a large batch of juice or you want to save the juice for another occasion, you can freeze it.
What does rhubarb juice taste like?
The juice tastes like rhubarb which has a unique flavor on its own. Rhubarb by itself is tart, but the sugar adds a bit of sweetness and the vanilla adds depth to the flavor making it a refreshing drink for the summer.
Can you make rhubarb juice without sugar?
You can easily omit the sugar in the recipe and make the juice without it, but it will be rather tart. If you are drinking the rhubarb juice on its own, I would recommend adding honey or maple syrup to add a little bit of sweetness.
What can you do with rhubarb juice?
You can drink the rhubarb juice on its own, add the juice to sparkling water, use the juice to make rhubarb lemonade, or even make a rhubarb cocktail.

I love old fashioned rhubarb recipes like rhubarb crumble & rhubarb pie! This juice sounds delicious and I appreciate the other sweetener suggestions you made besides white sugar. I would like to try this recipe, but might experiment with using the herb stevia as a low calorie sweetener.
My dad made strawberry rhubarb pies when I was growing up, and it is delicious! The juice is tasty! My mom uses stevia, but I haven’t tried it with this juice, so I’m not sure how it would taste, but it would probably be good!

Rhubarb is an underrated ingredient. Back in Texas, my dad would always make rhubarb and strawberry pies growing up, and in Denmark, rhubarb is common in desserts!
