In Denmark, jordbærtarte or strawberry tart is a popular summer dessert. The tart consists of a marzipan base that is topped with chocolate, vanilla cream, and strawberries. I wanted to share a recipe for the strawberry tart if you would like to try it yourself.
The strawberry tart recipe consists of 4 parts – making the marzipan base, adding the chocolate layer, making the vanilla cream, and topping the tart with strawberries.
Danish Strawberry Tart Recipe

- Marzipan Tart Base
200 grams (3/4 cup) of marzipan
80 grams (1/3 cup) of sugar
200 grams (3/4 cup) of room-temperature butter
3 eggs
150 grams (1/2 cup) of flour
- Chocolate Layer
100 grams (1/2 cup) of dark chocolate
- Vanilla Cream
2 deciliter (3/4 cup) of milk
1 egg
1/4 teaspoon of vanilla powder or the seeds from 1/2 of a vanilla bean
2 tablespoons of sugar
1 tablespoon of cornstarch
1.5 deciliters (1/2 cup) of whipping cream
- Strawberries
1-2 handfuls of strawberries
Directions
- Marzipan Tart Base
- Combine the marzipan and sugar together in a mixing bowl. You can use a hand mixer, but I would recommend using your hands to help break up the marzipan because it is quite dense
- Add the room-temperature butter to the marzipan and sugar mixture and combine. It is easier to use a hand mixer at this point
- Add the eggs to the mixture and mix together
- Next, add the flour to the mixture and combine all the ingredients to make the marzipan base. The dough will be sticky
- Put flour on your fingers to prevent the dough from sticking to your hands and press the marzipan base into a pie or tart pan
- Bake the marzipan tart base at 180° C / 355° F for 25 minutes. The tart will be done baking when the edges are browned
- Chocolate Layer
- Melt the chocolate on low heat
- As soon as the marzipan tart base has come out of the oven, add the chocolate on top of the tart and spread out the chocolate to form a thin layer. The chocolate will cool and harden as the tart cools
- Vanilla Cream
- Whisk the milk and egg together in a pot and heat on medium heat
- Once the milk and egg are almost boiling, add the vanilla powder or vanilla bean seeds, sugar, and cornstarch and whisk the ingredients together to make the vanilla cream
- Let the vanilla cream boil for 3 minutes
- Remove the pot from the heat and let the cream cool
- While the cream is cooling, whip the whipping cream with a hand mixer until peaks form. The whipping cream is ready when it does not slide around in the bowl and you can flip the bowl upside down without the cream falling out
- Once the vanilla cream is cool, combine the cream with the whipping cream
- After the marzipan tart with the chocolate layer is cool, top the tart with the vanilla cream
- Strawberries
- Rinse the strawberries
- Cut off the stems of the strawberries and slice the strawberries in halves or quarters
- Place the strawberry slices on top of the vanilla cream
Frequently Asked Questions
Can you make a different base for the tart?
If you do not like the taste of marzipan or you have a food allergy to tree nuts and almonds, you can make a sweet tart crust instead and continue with this recipe from the chocolate layer.
Can you omit the chocolate layer?
If you are not a fan of chocolate, you can omit the chocolate layer and the tart will still be delicious. Also, you can use milk chocolate instead of dark chocolate, but the tart will be slightly sweeter.
Can you top the tart with other fruit?
Along with strawberries, you can also add blueberries, raspberries, and blackberries to make it a mixed-berry tart. You could also omit any berries you do not like.
How long does the strawberry tart last?
The strawberry tart will last around 2-3 days in the fridge when stored in an airtight container. However, the strawberries can become softer and the tart can be harder to cut after it has been refrigerated.
Can you freeze the tart?
I would not recommend freezing the tart with the vanilla cream and strawberries. However, you can freeze the marzipan tart base for 2-3 months and defrost it in the fridge once you want to make the strawberry tart.

Love a good danish. I always have to grab one when I come across them in the bakery. But your Danish Strawberry Tart is different from what I am accustomed. Thank your for converting the deciliter to ounces and sharing your recipe.
In Denmark, danishes are referred to as wienerbrød (the direct translation would be Vienna bread) because back in the 1800s, Danish bakers hired worked from abroad including from Austria, and they brought their own recipes and from there, the danish was born!
Anyways the Danish in my post title simply refers to that the strawberry tart is based on the jordbærtarte found at Danish bakeries during the summer.
