Danish Jerusalem Artichoke Soup Recipe

Last weekend, I went out of town, and the hotel’s restaurant served Jerusalem Artichoke soup as an appetizer, which was absolutely delicious! I wanted to make the soup for lunch this week and share the recipe here, so you can try it yourself.

What are Jerusalem Artichokes?

Despite the name, Jerusalem artichokes are not connected to Jerusalem or related to artichokes. In fact, Jerusalem artichokes are native to North America and part of the sunflower family. Other common names for Jerusalem artichokes include sunchoke and sunroot. Jerusalem artichokes can be found at most grocery stores in Denmark and are regularly used for soups. You can also use Jerusalem artichokes to make roast vegetables, fry them in a pan, or use them in a risotto.

Danish Jerusalem Artichoke Soup Recipe

Ingredients

  • 1 onion

  • 5oo grams (1 pound) of Jerusalem artichokes

  • 1 big potato or 3 small potatoes

  • 1 tablespoon of oil

  • 2 garlic cloves

  • 1 vegetable bouillon

  • 2 liters (8 cups) of water

  • 2.5 deciliters (1 cup) of cream

  • Salt

  • Pepper

  • Dried thyme

  • Fresh thyme

Directions

  • Peel and chop the onion and place it in a pot with oil on medium heat
  • While the onion is frying, peel the Jerusalem artichokes and potatoes
  • Set 1-2 Jerusalem artichokes aside and cut the remaining Jerusalem artichokes and potatoes into small pieces
  • Place the chopped Jerusalem artichokes and potatoes into the pot with the onion and cook for 5 minutes
  • Peel and mince the garlic cloves and add the garlic to the pot
  • Add the vegetable bouillon, water, salt, pepper, and dried thyme to the pot and cover with a lid
  • Simmer the soup for 15 minutes
  • While the soup is simmering, prepare the Jerusalem artichoke chips with the reserved 1-2 pieces
  • Thinly slice the Jerusalem artichokes
  • Air Fryer Method: Place the Jerusalem artichoke slices into a single layer and top with salt. Heat the slices at 200° C / 390° F for 5 minutes. Flip the slices and heat for another 5 minutes. If your slices are thicker, they may need an additional 5 minutes to ensure they are brown and crispy. Oven Method: Place the Jerusalem artichoke slices in a single layer on a baking sheet with oil and salt. Bake at 180° C / 355° F for 20 minutes.
  • After the soup has simmered for 15 minutes, blend the soup with an immersion blender or regular blender
  • Add the cream to the soup and bring the soup back to a simmer before serving
  • When serving the soup in bowls, add the Jerusalem artichoke chips and fresh thyme

Frequently Asked Questions

What do Jerusalem artichokes taste like?

Jerusalem artichokes have a similar texture and taste to potatoes, with a sweeter, nutty flavor that is similar to an artichoke.

Do you need to peel the Jerusalem artichokes for the soup?

It is not absolutely necessary to peel the Jerusalem artichokes for the soup, but the peeled Jerusalem artichokes give a smoother texture when blending. If you would rather not peel the Jerusalem artichokes, you should scrub them to remove all the dirt.

How long does the Jerusalem artichoke soup last in the fridge?

If you have leftovers, the soup is good for 3-4 days in the fridge.

Can you freeze the soup?

If you are making the soup in advance for a special occasion, you can freeze it in an airtight container for 2-3 months.

Can you make the Jerusalem artichoke soup vegan?

The recipe is mostly vegan, with the exception of the cream. You can easily swap the cream for a vegan alternative, such as a vegan cream, coconut cream, or plant-based milk like nut milk, oat milk, hemp milk, coconut milk, or soy milk.

What other toppings can you use for soup?

This soup uses fresh thyme and Jerusalem artichoke chips as toppings. It is also common in Denmark to top the soup with fresh chives or parsley, diced apples, and bread croutons. If you want to add meat to the soup, bacon bits, cod, and scallops are popular toppings.

      The soup is made from Jerusalem artichokes, which are not artichokes despite the name. It is delicious though!
