Råkost is a traditional Danish carrot salad that is perfect to have as a side dish, lunch, or snack. The carrot salad is also easy to make and only requires 4 ingredients!

2 apples
100 grams or 1/2 cup of raisins
3 tablespoons of lemon juice or the juice from a whole lemon
Directions
- Rinse the carrots and apples
- Peel the outer layer of the carrots
- Shred the carrots and apples with a grater. You can also use a food processor or a peeler to shred them
- Add the shredded carrots and apples to a large bowl
- Add the raisins and lemon juice to the bowl
- Mix the carrots, apples, raisins, and lemon juice together
- Enjoy!

I’m not in to raisins though. I used to love raisins when I was a child, and I used to eat them a lot! I used to pick raisins out of the dough whenever my Dad was baking and that used to drive him nuts! lol. Now as an adult I can’t stand raisins! I guess I had my fill of them as a child! I would just use dried cranberries for this recipe instead of raisins!
