Valentine’s Day is just around the corner. For this Valentine’s Day, I want to share my take on a classic Danish dessert: a strawberry shortcake æbleskiver that is served with strawberries and whipped cream.
Outside of Denmark, æbleskiver (also spelled ebelskiver in English-speaking countries) are commonly referred to as Danish pancakes. Æbleskiver are made with similar ingredients to pancakes, but they are made in a special æbleskiver pan that gives them a round shape similar to a popover. This recipe is in 3 parts: the batter, strawberries, and whipped cream. For this recipe, you will need the æbleskiver pan, which you can find at some home stores as well as on Amazon.
Valentine’s Day Strawberry Shortcake Æbleskiver Recipe

- Æbleskiver Batter
1 cup of flour
1 1/2 teaspoons of sugar
1/2 teaspoon of baking powder
1/4 teaspoon of salt
2 tablespoons of butter
2 eggs
1 cup of milk
1/2 teaspoon of vanilla extract
1 tablespoon of butter
- Strawberries
1 pint of strawberries
3 teaspoons of sugar
- Whipped Cream
1 cup of heavy cream
1 teaspoon of vanilla extract
Directions
- Æbleskiver Batter
- In a large bowl, combine the flour, sugar, baking powder, and salt
- In a separate bowl, melt the 2 tablespoons of butter
- Using the bowl with melted butter and a 3rd bowl, separate the egg yolks and egg whites. The yolks will go in the bowl with the melted butter, while the whites will be in the 3rd bowl
- Add the milk and vanilla extract to the bowl with the butter and yolks and mix well
- Combine the yolk mixture with the dry ingredients in the large bowl and mix the batter until blended
- Whisk the egg whites with an electric mixer until peaks form, then fold them into the batter until there are no more white streaks
- Melt the 1 tablespoon of butter
- Brush the melted butter into each of the wells of the æbleskiver pan
- Heat the pan on medium heat, and once the butter starts to bubble, fill each well with the batter
- Cook the æbleskiver for about 5 minutes or until the bottoms are lightly browned
- Flip the æbleskiver with a skewer or fork and cook the other side until lightly browned for an additional 3-5 minutes
- Once the æbleskiver are done cooking, transfer them to a plate and repeat steps 8-11 for the remaining batter
- Make the strawberries and whipped cream following the directions below
- To assemble, place 3-5 æbleskiver in a small bowl, then top with the strawberries and whipped cream
- Strawberries
- Rinse the strawberries, then chop them into small pieces
- Place the strawberries into a bowl and combine them with the sugar
- Whipped Cream
- In a bowl, combine the heavy cream with the vanilla extract
- Using an electric mixer, whisk the cream until peaks form
Notes
- Depending on the size of the wells of the æbleskiver pan, the number of æbleskiver you will be able to make can vary. With my pan, I was able to make around 25.
Frequently Asked Questions
Where can you buy an æbleskiver pan?
While living in the US, I bought my first æbleskiver pan from Amazon, and it was the Lodge Cast Iron pan. However, there are numerous other brands available online and in home stores. When I moved to Denmark, I bought a new pan at a market that was made in Denmark
What does the strawberry shortcake æbleskiver taste like?
On their own, æbleskiver taste like a light and fluffy pancake. The strawberries add a fresh sweetness, while the whipped cream adds a layer of airy and sweet creaminess.
How long do the æbleskiver last?
The æbleskiver last 3-5 days when stored in an airtight container in the fridge. Additionally, you can freeze the æbleskiver for up to 3 months. To reheat them, you can heat them in the oven at 180°C / 350°F for 15-20 minutes.
Can you make the recipe gluten-free?
Yes, you can. I have seen recipes that use oat flour, rice flour, and other gluten-free flours.
What else can you serve æbleskiver with?
In Denmark, æbleskiver are commonly served with powdered sugar and strawberry jam. You can eat æbleskiver with other types of jam, such as raspberry, cherry, or lingonberry, or other fresh fruit and berries. Furthermore, you can have æbleskiver with vanilla ice cream or Greek yogurt and top them with honey, maple syrup, chocolate sauce, or caramel sauce.
