Kartoffelsalat Danish Potato Salad Recipe

Kartoffelsalat is the Danish version of potato salad that is perfect as a summer dish. You can buy tubs of kartoffelsalat at grocery stores in Denmark, but I want to share a recipe so you can easily make your own potato salad.

Ingredients

  • 1 kilo / 2 pounds of potatoes

  • 250 grams / 1 cup of crème fraiche

  • 2 tablespoons of mayonnaise

  • 1 teaspoon of Dijon mustard

  • 1 teaspoon of sugar

  • Salt

  • Pepper

  • A handful of chives

Directions

  • Scrub or peel the potatoes, and place them in a pot
  • Cover the potatoes with water and place the pot on the stove on high heat
  • Boil the potatoes for 10-15 minutes (larger potatoes may need more time)
  • While the potatoes are boiling, combine the crème fraiche with the mayonnaise, Dijon mustard, sugar, salt, pepper, and chives
  • After the potatoes are boiled, drain the water and let the potatoes cool for at least 15 minutes
  • Once the potatoes are cool, cut them into slices and place them into a large bowl
  • Add the crème fraiche dressing to the sliced potatoes and mix well
  • Enjoy!

Frequently Asked Questions

What does kartoffelsalat taste like?

Danish potato salad tastes more like creme fraiche than other potato salads I am used to, like Southern potato salad, which is known for being more mustardy and containing hard-boiled eggs. You can of course add more mustard to this recipe if you do like a strong mustard flavor. That said, the kartoffelsalat has a fresh taste, which makes it perfect for the summer.

What can you serve kartoffelsalat with?

The potato salad makes a great side for grilling, whether it is hamburgers, hot dogs, steak, chicken, frikadeller, tofu, mushrooms, or other vegetables. The potato salad would also go well as a side with sandwiches or wraps. You can also serve the potato salad with leafy green salads.

Can you make the potato salad in advance?

You can easily make the potato salad a day in advance and store it in the fridge in an airtight container.

How long does the potato salad last in the fridge?

When stored in an airtight container, the potato salad will last 3-4 days in the fridge.

Do you need to peel the potatoes?

You do not need to peel the potatoes, as scrubbing them should be enough to clean them. However, some people do prefer to eat potatoes without peels, so it is up to your personal preference if you want to peel them or not.

Can you make the potato salad vegan?

Yes, you can! You will need to substitute the crème fraiche and mayonnaise for vegan alternatives. You can either purchase a vegan substitute or make your own vegan creme fraiche and vegan mayo.

    I looooooove potato salad – I usually make it with mini-potatoes, not peeled, just scrubbed, and a tub of low fat cream and chive dip. But next time I’m going to add some mustard as well, Kartoffelsalat sounds delicious!

      Thanks! I love potato salad too, especially Southern potato salad, but the Danish version is delicious too!
      I did get small potatoes from a farm for this recipe, and I scrubbed them instead of peeling them because Danish potatoes are good with the peel!
