To continue with my Reading Through Cookbooks post, I decided to make the Frozen Strawberry Pie from the Frozen Yogurt cookbook.
The recipe includes 2 parts, making the frozen yogurt and making the cookies. First off the frozen yogurt!
Ingredients
- 500 g natural yogurt
- 2 dl cream for whipping
- 80 g sugar
Directions
- Whisk the yogurt and sugar with a hand mixer
- In a separate bowl whisk the cream until it becomes whipped cream and does not fall out of the bowl when you flip it over
- Add the whipped cream to the yogurt and whisk it until it is combined
- Place the yogurt in a sealed freezer safe container and put it in the freezer for 4 hours
- Once every hour take the yogurt out and stir it
Notes
- I used a freezer safe tupperware container with a lid for the yogurt. Not all tupperware is freezer safe, so check if it has the snowflake symbol
- The yogurt is stirred every hour to avoid ice crystals from forming and to keep an airy texture
- After the 4 hours, I found that the yogurt melted quickly, so I would recommend keeping it in the freezer for even longer
- If you have an ice cream machine, for step 4 you can put the yogurt in the machine for 25 minutes instead of in the freezer
Next for the cookies!
Ingredients
- 1 egg
- 50 g sugar
- 75 g butter
- 200 g flour
- 250 g strawberries
- Frozen yogurt from part 1
Directions
- Whisk the egg and sugar together
- In a separate bowl whisk the butter
- Slowly add the butter and flour to the egg and sugar mixture
- Once the ingredients are combined, form the dough with your hands
- Roll out the dough onto a piece of baking paper
- Place the dough in the fridge for 30 minutes
- Take the dough out of the fridge
- Preheat the oven to 200° C
- Form the dough into desired shapes
- Bake the cookies for 10 minutes and let cool
- Rinse the strawberries and cut into slices
- Place the cookies on a plate
- Top the cookies with the strawberry slices
- Add a scoop of the frozen yogurt on top of each cookie
Notes
- When I was forming the dough in step 4, the dough was really loose so I added a little flour until it reached a dough like consistency
- For step 9 I used a Pusheen cookie cutter, but you can form the dough into normal cookie shapes or use whatever cookie cutter you would like
- For step 10 when I baked the cookies for 10 minutes, they got really dark and some of the edges burned. I recommend looking at your cookies at around 7-8 minutes to see if they are done. If so, then take them out
- The recipe also suggests using chopped pistachio nuts as garnish as the very last step, but I did not include them
The Process
Overall, I think the dessert tasted great! The cookies do taste a bit plain by themselves, but with the frozen yogurt and strawberries they taste delicious. The frozen yogurt does have the natural yogurt flavor, but you can easily add other toppings like chocolate, fruit, candy, and muesli to give it more flavor.

It’s a shame that the cookies were so plain! Maybe they would have been better with a bit of cocoa powder in them? Looks good anyways though!

For the frozen yogurt, yes I would! I like the natural flavor & I can eat it by itself or with toppings. I would use a different recipe for the cookies because like I said they tasted plain by themselves.
